How to fill pastry bags correctly?
Professional chefs and bakers often use special holders known as pastry bag stands. The pastry bags are simply hooked into these holders, which hold them open. This allows you to have both hands free and easily fill the pastry bag with the desired mixture.
After filling, push the mixture down, using a scraper if necessary, and close the bag tightly at the top. Then use scissors to cut the tip to the desired size and you can start immediately.
If you are working with a nozzle, this must be inserted into the piping bag before filling. Special piping bag stands with a recess at the bottom for the nozzle are available for this purpose. This makes it easier to insert the nozzle and ensures that it is positioned correctly from the start.
